Tofu and Onion in Carmel Sauce

½ cup sugar
1 cup nam pla (Asian fish sauce) or soy sauce
l large onion, thinly sliced
pepper to taste
1 pound firm tofu, cut into ¾ to 1 inch chunks
1 tablespoon butter, optional
1 tablespoon lime juice or vinegar or to taste

White rice for serving

Put sugar and tablespoon of water in 10 inch skillet, nonstick, over medium heat. Cook, shaking pan occasionally, until sugar melts and browns a little. Turn off heat and carefully had fish sauce or soy sauce. Turn heat to low, and add onion stirring for about 5 to 10 minutes, until onion is tender. Add pepper and tofu.
Simmer tofu in sauce so it is glazed and heated through, about 10 minutes. Stir in butter along with lime juice or vinegar. Taste and add more salt, pepper or lime juice or vinegar if you want. Serve over rice.
