1 cup, plus l tablespoon mayo
6 green onions (2 minced) 4 cut into 4 inch lengths
1 Tablespoon fresh lemon juice
2 teaspoons grated lemon peel
¼ cup chopped fresh Italian parsley
1 ¼ pounds skinless salmon fillets, cut into one inch cubes
2 tablespoons Dijon mustard .
½ cup panko or fresh breadcrumbs
¾ teaspoon salt

olive oil
Whisk 1 cup mayo, 2 minced green onions, lemon juice and grated lemon peel in small bowl to blend. Season with salt and pepper. Set aside
Combine remaining 4 green onions and chopped parsley in processor, blend until finely chopped. Add cubed salmon, mustard, and remaining l tablespoon mayo. Using on off switch, blend until salmon is coarsely chopped. Transfer this mixture to bowl, mix in breadcrumbs, and seasonings. With moistened hands, use about 1/3 cup for each patty, and shape. About ½ inch thick. Brush both sides with olive oil. Sauté in lightly oiled pan, to your preference of doneness, about 2 minute a side. Serve with lemon mayo along side.
