Orange Chicken Breasts

Preheat oven to 500 degrees

2 good sized chicken breasts, halved

Combine:
2 tablespoons low salt soy sauce
2 tablespoons brown sugar
3 tablespoons thawed orange juice concentrate
2 cloves garlic minced
1 tablespoon grated orange zest
1 teaspoon minced fresh ginger
½ teaspoon salt
freshly ground pepper to taste

Place chicken, skin side up, in a metal, glass or ceramic baking dish
Pour sauce over chicken and refrigerate for an hour or more.

Roast chicken in center of oven for 20 minutes, basting with the sauce at least four times. If desired, turn on broiler and broil chicken until browned, about 2 minutes, no more.
