Preheat oven to 450
Prepare 4 medium Yukon potatoes: peel, halved lengthwise. Place each half, cut side down, on board. Arrange 2 chopsticks on both sides of potato and slice thinly across.
PROCESS:
½ cup white bread crumbs
¼ cup Parmesan cheese, grated
1 Tablespoon olive oil or melted butter
1 Teaspoon sweet paprika
Salt and pepper to taste.
Mix in food processor and transfer to shallow dish.
Drizzle potatoes with 2 to 3 tablespoons olive oil ,carefully bend to separate sections, then roll tops in crumb mixture. Arrange potatoes in baking dish, cover with foil, and bake 30 minutes. Remove foil and continue baking until crumbs are brown and potatoes cooked, 15 or so more minutes.
