1 pound of white onions
4 Tablespoons butter
3 eggs
1/4 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon nutmeg
Peel and slice the onions. Sauté in 4 tablespoons of butter until cooked but not browned, about 15 minutes. Cool. Slightly beat 3 eggs. Add 1/4 cup of cream and salt and nutmeg. Blend with the onions. Place in a greased shallow baking dish that can be used for serving, about a 4-cup size. Bake uncovered in 350 degree oven until set and lightly browned, 20 to 25 minutes.
